When your meal plan calls for non-starchy vegetables, you have a wide variety of nutritious options to choose from:

  • Leafy greens: spinach, kale, lettuce, arugula, Swiss chard

  • Cruciferous vegetables: broccoli, cauliflower, Brussels sprouts, cabbage

  • Bell peppers (all colors)

  • Cucumbers

  • Zucchini and summer squash

  • Tomatoes (Limit to one cup per day)

  • Asparagus

  • Green beans

  • Mushrooms

  • Eggplant

  • Celery

  • Onions and garlic

  • Herbs (parsley, cilantro, basil, etc.)
